The Paradox of Inclusive Dining
When Pure Grit BBQ opened its doors in New York City, it carried a powerful message: "BBQ for All." The vision was simple yet ambitious – create an inclusive dining experience centered around America's beloved barbecue tradition. However, this journey revealed an unexpected paradox about the nature of inclusivity in the restaurant industry.
The Initial Vision: Breaking Down Barriers
Traditional barbecue has long been associated with meat-centric macho dining, often leaving plant-based eaters on the sidelines. Pure Grit BBQ aimed to change this narrative by creating a space where everyone, including vegans could experience the full depth of smoky, savory BBQ flavors - and it succeeded in vegans' eyes. The restaurant's mission of inclusion seemed straightforward: bring the joy of BBQ to those excluded from this culinary tradition.
Challenges in the Vegan Restaurant Space
There has been a concerning trend in the vegan restaurant industry in recent years. Despite growing interest in plant-based eating, numerous vegan-only establishments, especially in the fast-casual space, have been forced to close their doors, us included. This pattern suggests that while demand for plant-based options rises, the segregated vegan-only model might not be the most sustainable approach.
Several factors contribute to these closures:
High operational costs in a niche market
Limited customer base compared to traditional restaurants
Increased competition from mainstream restaurants adding quality vegan options
Economic pressures forcing diners to seek more flexible dining options
The Inclusivity Paradox
As the business evolved, an important realization emerged: by creating a vegan-only establishment, Pure Grit BBQ had inadvertently created another exclusive space, albeit one that catered to a different demographic. While the restaurant successfully served the vegan community, it didn't truly achieve its goal of "BBQ for All." The irony was evident – in attempting to be inclusive, we had created another silo in the dining landscape.
The Pivot: Redefining Inclusive Dining
This realization, coupled with the challenging market dynamics facing vegan-only establishments, led to a profound shift in perspective. True inclusivity in dining isn't about creating separate spaces for different dietary preferences – it's about integrating delicious plant-based options into every dining experience. The goal shouldn't be to separate vegan diners from others but to make plant-based options so appealing that they become a natural part of every menu.
Smoke as the Great Unifier
BBQ's secret weapon has always been smoke – that primal, aromatic element transforming simple ingredients into crave-worthy dishes. Pure Grit BBQ discovered that smoke perfectly bridges traditional BBQ and plant-based innovation. The complex flavors of smoking vegetables and plant proteins appealed to all diners, regardless of their dietary preferences. We proved this theory at countless BBQ events getting manly meat men and women to try Impossible Foods for the very first time. We also sold out of our smoked sliders at every Nets game at our booth in the Barclays Center in Brooklyn. This revelation pointed to a new direction: bring our delicious plant-based BBQ to where people are gathering together.
Integration Over Separation
The future of inclusive dining lies not in creating more specialized restaurants, but in breaking down the barriers between vegan and traditional establishments. By developing smoked plant-meat meals that can compete with conventional BBQ on flavor alone, Pure Grit BBQ is working toward a future where:
Every restaurant offers compelling plant-based options
Diners of all preferences can share meals together
Plant-based dishes are chosen for their taste, not just their ethics
The line between vegan and non-vegan restaurants becomes increasingly blurred
Looking Forward: True Inclusion
The lessons learned from Pure Grit BBQ's journey suggest that the path to true inclusivity in dining is more nuanced than initially thought. Rather than creating separate spaces for different dietary preferences, the focus should be on developing plant-based options that are so delicious they naturally find their way onto every menu.
This approach serves the original mission of inclusion better and has the potential for greater impact. By bringing smoked plant-meat meals to traditional restaurants, Pure Grit BBQ can reach more people and normalize plant-based options in mainstream dining. The end goal isn't to convert everyone to veganism but to ensure that delicious plant-based options are available wherever people choose to eat.
The journey of Pure Grit BBQ represents a valuable lesson in how businesses must sometimes pivot their approach to better serve their core mission. Sometimes, true inclusivity means breaking down walls rather than building new spaces and finding ways to bring people together rather than creating new categories that keep them apart. We intend to move beyond the bun and bring our smoked center-of-plate plant proteins to everyone, everywhere on every menu so that Pure Grit can be truly enjoyed together.
